Day 9 of Eating at Home.. Lunch recipe.. Veggie Bagel Sandwich

Here is a nice lunch recipe. You can pack this in your lunch or enjoy it at home like I am right now. 🙂 This is really tasty if you like veggies and cheese.

Here is what you need.

  • a bagel
  • cream cheese
  • 4-6 cucumber slices
  • 2-4 tomato slices
  • 1 leaf of lettuce
  • 1 carrot
  • slice of sharp cheddar cheese

Start by toasting you bagel. These are one of my favorite bagels. If you have a Sunflower Market near you, you should definitely try them.

If you have a toaster you don’t have to babysit to make sure it doesn’t burn  your bread shred your carrot while you wait.

Spread cream cheese over both sides of your bagel. Just a light layer will do since you will also be adding sharp cheddar cheese later.

First put the shredded carrot on one side. Put as little or as much as you would like.

Add cucumbers on top

Then the tomatoes.

Finally add your leaf of lettuce on top and your slice of sharp cheddar cheese on the other bagel half.

Now close up your sandwich and enjoy!

Doesn’t that look delish!?!? Eating my last bite right now.. YUM YUM!

  1. that looks absolutely yummy.. but I love bagel sandwiches.. and this one’s healthier then the ones I use to get at the bagel store.. cream cheese, bacon, lettuce, tomato.. okay now really I’m craving a bagel sandwich.. 🙂
